Founded in 2021 by artisan butcher Lulu Henderson and culinary scientist Marcus Vance, Lulu's Beef was born out of a simple observation: while steak is one of the most ordered dishes in high-end steakhouses, it is also one of the most intimidating proteins for home cooks to prepare. We believe that cooking a world-class, restaurant-quality steak should not be an exclusive secret guarded by professional chefs. Anyone can master the grill, cast iron skillet, or dry-aging cabinet with the right knowledge, techniques, and sourcing.

Lulu Henderson — Co-Founder & Head Butcher

Lulu is a third-generation butcher with over fifteen years of hands-on experience in whole-animal butchery. Having worked in artisanal butcheries across Chicago and Austin, she specializes in custom cuts, dry-aging room management, and sustainable meat sourcing. Lulu's passion is educating consumers on lesser-known, budget-friendly cuts like the Denver steak, bavette, and flat iron, helping home cooks enjoy premium beef flavors without premium prices.

Marcus Vance — Co-Founder & Culinary Scientist

Marcus holds a degree in Food Science and spent a decade working as a menu consultant and product developer for specialty restaurants. He is obsessed with the physics of cooking steaks, thermal diffusion, and fat rendering temperatures. At Lulu's Beef, Marcus translates complex chemical processes—such as collagen breakdown in slow cookers or the moisture loss mechanics of dry-aging rooms—into easy-to-understand, actionable tips for home cooks.
